I would strongly suggest you use a pinch of pepper vs. the 1\/2 tsp. It was spicy! I changed the ingredients to what we eat and what we had in the house. I didn&#8217;t use the green beans, nor any parsley. I also recommend not using an entire onion unless it&#8217;s a small yellow onion. I used about 1\/4 of the yellow onion I had, it was a large one.<\/p>\n<p>This is what it looked like in my Instant Pot before I shut the lid:<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-1070\" src=\"https:\/\/southernsunnydays.com\/wp-content\/uploads\/2016\/10\/IMG_5520.jpg\" alt=\"img_5520\" width=\"326\" height=\"244\" \/><\/p>\n<p>Ingredients:<\/p>\n<p>1 yellow onion, chopped<br \/>\n2 carrots, cut into \u00bd-circles<br \/>\n2 stalks celery, chopped<br \/>\n1 medium sweet potato, peeled and cut into \u00be-inch pieces<br \/>\n4 garlic cloves, minced<br \/>\n1 \u00bd cups frozen green beans<br \/>\n\u00be cup pearl barley<br \/>\n1 tsp paprika<br \/>\n1 tsp dried oregano<br \/>\n\u00be tsp dried thyme<br \/>\n\u00bd tsp salt<br \/>\n\u00bd tsp ground pepper<br \/>\n1 (14 oz.) can petite diced tomatoes<br \/>\n6 cups low-sodium vegetable broth<br \/>\n2 cups water<br \/>\n\u00bc cup minced flat-leaf parsley<\/p>\n<p>All vegetarian ingredients and I believe this is vegan as well.<\/p>\n<p>Directions:<\/p>\n<p>Combine all of the ingredients, except for the parsley, in a large (6-quart) slow cooker.<br \/>\nCook on LOW until the barley is tender, about 8 hours.<\/p>\n<p>Instant Pot &#8211; Click the soup button. It&#8217;s about 15-20 minutes to get up to pressure, then 30 minutes until it&#8217;s done.<\/p>\n<p>Stir in the parsley. Serve.<\/p>\n<p>This makes 11 cups. I filled two large canning jars almost to the top and I had 3 adults eat as well.
